Radiatore Slow-Dried Pasta

radiatori pasta

Radiatore Pasta look like miniature radiators. They have a lot of surface area to really get attached to those sauces.

We slow dry our radiatore in small batches on wooden racks for over 2 days the way it was done years ago on the hills in Italy. This process makes our slow dried pasta tastes more like fresh pasta! Other companies mass produce  (in order to make more product) and dry quickly on a high heat, this “cooks” the pasta and diminishes the quality.
We also use 100 % semolina, specially milled to our specifications, on all of our slow dried pastas.
Pasta is packed in a full one pound (16 oz) bag. We have 6 bags in a case.
